Callaloo - The Staple Dish Of West Africa That Has Been Personalized By Every Culture That Has Adopted It

Every culture has its staple food. For the people of West Africa, this characteristic dish is callaloo. At its heart, callaloo is a fried mixture of soaked "callaloo" leaves, onions, and spices. Although originating in West Africa, this dish has been adopted by countries

throughout the African continent, across the West Indies, and into the Caribbean. As it has been passed on, each culture has added its own touch by selecting different leaves or by adding extra items to the dish. Common extras include seafood, other vegetables such as pumpkin and chilli, or other spices such as garlic. The leaves used in the dish are also chosen based on what's preferred or common in the region. Amaranth is the traditional leafy green used but taro, water spinach, or nightshade are common alternatives. With its many variations, callaloo is served as a main dish or as a side; its final composition being influenced not only by the culture, but the chef as well.
